beef stirfry with zoodles

this recipe is free from dairy.
2 tbs sesame oil
1 tsp fresh grated ginger
1/4 cup lime juice or apple cider vinegar
1/4 cup coconut aminos/ tamari/soy (or if using soy/tamari add 1-2tbs honey)
500g beef strips
400g pad thai noodles or 4-6 zucchini noodles for a low carb option (or mix of both)
1 onion, diced
2 cloves garlic, crushed
1 capsicum, sliced
bunch asparagus, roughly chopped
1 cup chopped green beans
3 spring onion, sliced
1/2 head broccoli, chopped into small florets
1 cup chopped mushrooms
2 tbs olive oil for cooking
1. mix all sauce ingredients in a small jar or bowl then set aside.
2. sauté onion and garlic until onion is translucent. add mushrooms and broccoli and cook until broccoli is about 1/2 cooked. add all remaining veggies and cook for a couple of minutes before removing from heat.
3. if using rice noodles, prepared accordingly to packet instructions. add beef to the frying pan and brown on both sides. add the veggies, noodles and sauce back in and stir-fry well for 3-4 minutes then serve. top with fresh coriander and chilli if desired.
