ingredients

one large piece of rump steak and 2tbs melted butter (or olive oil). 


spice mix

- 3 tbs smoked paprika

- 1 tsp ground chilli or cayenne pepper (double this if you like it hot or halve if you don’t love spice) 

- 1 tsp thyme 

- 1 tsp oregano

- 1 tsp garlic powder

-1 tbs onion powder 

- 1 tsp salt

- 1 tsp pepper

salsa

- 1 mango, diced 

- 1/2 red onion, finely diced 

- juice of 1 lime

- 1 tsp salt

- pepper to taste

- 1 red chilli, finely chopped and seeds removed 

- 1/2 cup chopped coriander

method

1. prepare spice mix: combine smoked paprika, ground chilli or cayenne pepper, thyme, oregano, garlic powder, onion powder, salt, and pepper. store any leftover mix.

2. make salsa: mix diced mango, red onion, lime juice, salt, pepper, chopped red chilli, and coriander.

3. prep steak: drizzle rump steak with melted butter or olive oil, coat thoroughly with spice mix, pressing it in. repeat on the other side.

4. cook steak: preheat bbq. once hot, grill the steak to your liking.

5. rest steak: remove steak from bbq, let it rest for 10-15 minutes.

6. serve: slice steak thinly and serve with mango chilli salsa.
