ingredients
500g chicken minceÂ
1 tbs fresh grated gingerÂ
1 tbs freshly diced lemongrassÂ
1 small chilli, finely diced (remove the seeds if you don’t want it too spicy)
1 tsp fish sauce
3 tbs coconut aminos (or tamari/soy sauce)Â
good pinch salt & pepper
1 limeÂ
6 small tortillasÂ
herbs to garnish (thai basil, mint, coriander)Â

method
1. mix chicken mince, ginger, lemongrass, chilli, fish sauce, coconut aminos, salt, and pepper in a bowl. exclude lime, herbs, and tortillas. 2. spread a generous amount of mixture onto each tortilla. 3. preheat a pan over medium heat, then cook tortilla with mince side down. 4. once mince is cooked, flip to toast the tortilla lightly.
5. remove from pan and garnish with thai basil, mint, and coriander. 6. add a squeeze of lime juice. 7. repeat for all tacos.
8. serve and enjoy!
